Ridge Gourd with Carrot | a unique combination

Taste receptors on our tongue are entertained with numerous kinds of flavours throughout our lives. Sometimes that's all we focus on ; the taste. We work so hard to prepare food which pleases our brain for a few seconds and then regrets for longer when we step on the scale. Boring healthy diets are out of the table if you want to have a healthy body while "living" your life. A "balance", apply that to your diet just the way you should apply it to everything in life.
The reason why ridge gourd crossed my mind is that, we grew up eating this just because we were forced to. I hope you can relate to that. The fact that it has a very bland and neutral flavor always made us reject it as kids. If you have kids, I'm positive that you will agree with me. This recipe is a tiny attempt to add a little excitement to something boring.

Ingredients
Ridge gourd 1/2 medium sized
Carrots small diced
Plain flour 5 tbsp
Salt 1/2 tsp
Chilli powder 1/2 tsp
Water 1/4 cup
Oil 2 tbsp
Garlic 3 cloves
Onion 1/2 small
Capsicum 1 small
Tomato 1/2 medium
Soya sauce 1 tbsp
Sugar 1/2 tbsp
Chilli flakes 1 1/2 tsp
Instructions
01) First peel the skin & slice 1/2 medium sized ridge gourd.
02) Make a thick batter with plain flour, salt, chilli powder & water.
03) Dip each slice & air fry or bake them for 5 minutes at 160°C.
04) Heat a pan and add oil followed by garlic, onion & capsicum.
05) Add chilli flakes, tomatoes, sugar & soya sauce.
06) Finally, add crunchy diced carrots.
