Cooking food is an art, combining ingredients within the boundaries set by food chemists is innovation. Pineapple & peanut isn't a mashup created by myself but enjoyed in so many countries around the world. Introducing Sri Lankan kick to those very popular combination is something I enjoyed.
Pineapple is a Vitamin C rich fruit we all love ,with low calories & low cholesterol level, while peanuts have high calories, rich nutrients & low carbs.This might be a reason why there are so many food recipes with these two ingredients together.
For a fact, pineapple is known to aid digestion, boost immunity & speeding up recovery from surgeries. On the other hand majority of fats in peanuts are heart-healthy fats.
This is how I combined these 2 ingredients to match our taste buds.
Pineapple small sized
Garlic 3 or 4 cloves
Medium Onion 1/2
Green chillies 2 or 3
Curry leaves 5 or 6
Chilli flakes 2 tsp
Pepper 1/2 tsp
Salt 1/2 tsp
Sugar 1 n 1/2 tsp
Oil 2-3 tbsp
01) Heat the pan and add oil.
02) Add cumin seeds followed by garlic, curry leaves, green chillies & peanuts.
03) Once they are slightly cooked, add cubes of pineapple.
04) Then add chilli flakes, salt & pepper.
05) Onions and sugar should be added after mixing well.
06) Cook for 2-3 minutes and enjoy.
