Chicken noodle soup inspired by Korean Dal Kalguksu
If you are a fan of Korean dramas there is no way you aren't spellbound by Korean cuisine & their finest culinary artistry. Their Japchae (Stir fired noodles), Kimchi (fermented vegetables) & Bibimbap (mixed rice) few of my favorites. As someone who adores their culture, values, traditions, language etc I couldn't resist making this simple chicken noodle soup recipe inspired by Dal Kalguksu.

The original Dal Kalguksu is a steaming hot soup with shredded chicken and knife cut homemade noodles. The fact that they use very few ingredients and spices which doesn't overpower the taste of ingredients is something I love. The way they present their dishes is a true work of art as we are satisfied by the appeal of it even before we taste it. The aroma of fresh ingredients & spices are irresistible.

This is my take on Dal Kalguksu.
Ingredients
Chicken 200g
Garlic 10 cloves
Onion 3 small
Water 10 cups
Butter 1 tbsp
Mushrooms 100g
Soya sauce 1/2 tsp
Oyster sauce 1 tsp
Instant noodles 2 packets
Spinach a handful
Green chilies 1
Instructions
01) Add 200 g of marinated pieces of chicken into a pot with boiling water.(Marinated with salt, chili powder, pepper)
02) Add cloves of garlic & onions to the same pot and let it cook for 1 hour at high heat.
03)After one hour collect pieces of chicken and shred them.
04)Collect garlic and onion to mash them into a paste.
05)Add soya sauce, oyster sauce to the paste and mix well with boiled noodles.
06)Add butter to a pan and cook striped mushroom.(Season if needed)
07)Serve them in a bowl with fresh spinach & green onions.
