Chicken dumpling recipe with a secret ingredient.

This chicken dumplings recipe presented to you today has a little Sri Lankan kick with a secret ingredient I personally can't live without, which you might have already guessed if you were following my blog posts & YouTube videos from the very beginning. .

The moment juicy minced meat, finely chopped hearty vegetables, with a hint of salt, blended together to fill a smooth dough of flour, boiled in seasoned water, dipped in an appetizing dipping sauce with a pleasing aroma, touches your taste buds, this entire fusion will satisfy your soul to its very core, I will vouch for that.

Now it's your turn.

 For the dumpling dough

All purpose flour 250g

Salt 1/2 tsp

Water 1/2 cup

For the dumpling filling   

Minced chicken 100g

Carrots 2 medium sized

Shallots 3

Garlic 3 cloves

Ginger 1/2 tsp

Shallot leaves a handful

Kochchi (bird eye chilli) 1/2 tbsp

Butter or oil

Salt to taste

 For the dipping sauce 

Soya sauce 3 tbsp

Salt to taste

Sugar 1 tsp

Lime 1 tsp

Ginger 1 tsp

Kochchi (bird eye chilli) 1 tsp

Shallots 1 tsp

Shallot leaves 1 tbsp

For the dumpling dough

01) Mix flour and salt in a bowl.

02) Add cold water gradually to form a rough dough.

03) Dust flour to the work station & knead the dough for 2 minutes.

04) Let the dough rest for 2 hours in a covered bowl.

05) Once rested, take small potions to make medium thick wrappers.

 For the dumpling filling

01) Add butter to the pan in medium heat.

02) Slightly fry chopped garlic, ginger & shallots.

03) Followed by minced chicken, carrots, Kochchi (bird eye chilli) & shallot leaves.

04) Add salt according to your taste.

 For the dipping sauce 

01) Mix soya sauce, salt & sugar in a bowl.

02) Squeeze half a lime.

03) Take a separate bowl to mix shallots, ginger & kochchi ( bird eye chilli).

04) Add both elements together & mix well.

The process 

01) Place a spoonful of filling into the middle of the wrapper.

02) Wet half of the wrapper with water.

03) Fold the wrapper in half and pinch towards the middle to seal the mixture.

04) Add dumplings into boiling, seasoned water and cook for 3-4 minutes.
